It’s been a long time since I’ve made these bad boys. The convenience of protein bars can’t be overstated, finding one that has ingredients you’re down with and tastes good is quite a challenge. Add to that finding an economical choice in a house where multiple bars are consumed daily and it’s basically impossible. Don’t despair though, these bars are easy and delicious!

Ingredients:
2 Scoops of protein powder (I used chocolate flavor and it rocked)
¼ cup pumpkin seeds unsalted
2.5 cups shredded unsweetened coconut
1.5 cups slivered almonds
2 tbls flax seed soaked in 4 tbls water
1 egg
¼ cup honey
¼ cup almond butter
1/3 cup of coconut oil melted
½ tsp baking soda

Directions:
Put your flax seed and water in a small bowl to soak. Meanwhile, mix your eggs, honey, almond butter, and coconut oil. In a separate large bowl mix your nuts, seeds, protein powder, shredded coconut and baking soda. Next mix your wet ingredients into your dry. Line a baking dish with parchment paper and press down your mixture into an even flat layer. Bake on 325 for about 20-25 minutes. Let them cool completely before attempting to cut them. May want to pop them in the fridge for an hour just be safe.  When you are convinced they are cool, cut them into bars. Brought a couple of these to the gym to share and people seemed to like them so hopefully you do too.
